Brown Betty.



On a lovely Saturday morning myself, my dear friend Rachelle and my handsome fella Josh had an early  yummy breakfast- Gluten free pancakes! Courtesy of my lovely better half, we all enjoyed the fluffy parcels of deliciousness while discussing that gluten free looks and tastes fantastic and doesn't leave you feeling bloated and heavy. Now I maybe bias but Josh's pancake skills are pretty amazing, he can always make and flip a mean pancake and he's perfected the gluten free pancakes which can be very temperamental... While I decided to bring out my gorgeous teapot- Brown Betty to make a lovely large pot of Earl Grey. Brown Betty has been in my family for a long time, my father gave it to me to cherish just last year and it was given to him by his Father whose Mother was the owner.  My dad remembers His Grandmother using when he was little. It holds such value to me and my father and might I add always delivers a good pot of tea! Nothing I like more than a rather large cup and a even larger tea pot to start off a great morning. We all enjoyed and gluten free pancakes and tea, we were all very quiet at the table hehe :-)  

The key to fluffy gluten free pancakes are to beat your eggs with an electric beater and then add the gluten free flour and a little olive oil. I always like to add some cinnamon and/or nutmeg to add a little sweet flavour.
