I dream of Nigella......

The fellow and I were invited by my dear Daddy and his beautiful wife Justine's to dine on Sunday night. Justine made a wonderful gluten free quiche for us and dad asked if I'd kindly make a dessert, my instructions were to make on of my favourites! Come on Dad, I'm a sweet tooth I have an insane amount of favourites... I settled for my favourite Nigella dessert chocolate pear pudding, when I say settled it's not really settling it's AMAZING!!!. So easy and so yummy, I used peaches as I thought they'd give the warm summer night a little extra sweetness.

How lovely does it look yes!

Ingredients-

2 cans of pears in juice (you can add your favourite fruit)
125g plain gluten free flour
25g cocoa powder
125g caster sugar
150g butter, plus extra for greasing
1 teaspoon of baking powder
1/4 teaspoon bicarbonate of soda
2 eggs
2 teaspoons vanilla extract
*Handy hint- I always add a tablespoon of olive oil and some of the juice from the fruit as the gluten free flour needs more wet ingredients.

Method-

Serves:6-8

1. Preheat the oven to 200 degrees and grease a 22cm square ovenproof dish with butter.
2. Drain the pears and arrange them on the base of the dish.
3. Mix all remaining ingredients into a batter, with the gluten free mix I was get as much air into the mixture to make sure it's as fluffy as possible.
4. Spread the batter over the pears, and bake in the oven for 30 minutes (depending on oven)
5. Let the pudding cool for 5 or 10 minutes and cut into slabs. I like to serve with thickened cream.

It's pretty easy to do, so delish and one of my favourite desserts. I hope you enjoy it as much as I do!

I must say I really do heart Nigella.
